Currently, there is an extensive bibliography that demonstrates the possibility of obtaining extracts with highly appreciated biological activities (e.g. antioxidant, anticancer, antimicrobial, anti-inflammatory, anticholesterolemic and antihypertensive) from natural raw materials of moderate cost treated by various extraction methods. In addition, there is a social preference for the use of more natural products over products of synthetic origin. Among the raw materials suitable for systematic research into biological activities are underused plant species, whose industrial potential can be expanded. In this context, plant species used in traditional medicine whose use consists mainly of herbal products may represent a promising study matrix. In fact, it has been scientifically corroborated that many plant species used in traditional Galician medicine have various bioactive properties and beneficial health effects. Among the most used families, the Asteraceae family stands out, with a large number of species with bioactive potential.
