Resumen de Efecto de la raza y el sistema de lactancia sobre el color de la carne de cabritos de 5 razas españolas

  • We studied the influence of the lactation system on some characteristics of the NLG carcass of 5 Spanish breeds (Florida, Guadarrama, Payoya, Retinta and Verata). We sacrified 30 animals of each breed, half bred with artificial milk and the other half bred with their dams. We measured colour of M. Rectus abdominis at 1 day post-mortem with and without the covering fascia and colour of m. Longissimus thoracis at 1 and 3 days post mortem. In both muscles, breed affected all the studied variables. In m. Rectus abdominis, lactation system affected all the variables and there were no interactions between effects. Lightness of Rectus abdominis were higher when measured with fascia. In the Longissiums thoracis, lactation system affected all the variables except C* and the ageing affected all the variables except a*. In Longissmius thoracis, there were found interactions between breed and lactation system and higer the ageing time, higher the values of all variables.
