Correlation between colour parameters and total polyphenol in sweet cherry ‘sweetheart’ using different storage packages

    • Sweet cherry (Prunus avium L.) is a commodity very popular all over the world. In Portugal the sweet cherry orchards area is for about 5700ha with a production of 10500t (FAOSTAT 2012). Consumers are very fond of red fruits due to their nutritional properties. On the other hand producers would like to enlarge shelf life of sweet cherry in order to obtain higher profits. To achieve this objective a modified atmosphere can be used. In this trail two different plastic packages were tested: 1) a commercial micro perforated material that can be considered as an Active Modified Atmosphere modality and 2) unperforated bags of OPP (Bi-orientated Poly-propylene), both at 2ºC and 95% RH. Samples of sweet cherry variety Sweetheart from an orchard in S. Julião region (Alentejo, Portugal) were collected in the field at the commercial maturity stage, and fruit physical and chemical parameters were evaluated after 0, 10, 20, 30 and 40 days of cold storage. Several quality parameters were analyzed: weight loss, external colour (L* a* b* C* and h), textural evaluation (firmness), soluble solids content (SSC), titrat-able acidity (TA) and total polyphenols. The results obtained allow us to evaluate the correla-tion between polyphenol content and maturity parameters. Colour parameters seem to be well correlated with polyphenol. Usually external colour is a good maturity index.
