    • The aim of this research was to evaluate the effect of whole linseed and conjugated linoleic acid (CLA) supplementation on the fatty acid profile of subcutaneous adipose tissue from Holstein beef. Forty-eight young Holstein bulls (slaughtered at 458.6±9.79 kg body weight) were fed one of four isoenergetic and isoproteic diets: control (0 % linseed, 0 % CLA), linseed (10 % linseed, 0 % CLA), CLA (0 % linseed, 2 % CLA), and linseed plus CLA (10 % linseed, 2 % CLA). Subcutaneous fat samples were taken after 24 hours slaughter, from the 10th rib. The inclusion of linseed in the diet led to increase the level the linolenic acid, decrease the ratio of n6/n3 (linseed=4.09; linseed+CLA=3.71) and increase the ratio PUFA/SFA twice (linseed=0.09; linseed+CLA=0.10) in subcutaneous adipose tissue. Moreover, the addition of CLA in the diet decreased the ratio of n6/n3 (CLA=21.52), but linolenic acid and the ratio PUFA/SFA didn’t show significative differences (p>0.05) compared to the control. The nutritional quality of beef meat is improved by the inclusion of linseed and/or CLA in the diet of young bulls, due to the increase in total PUFA and total CLA and the decrease in n-6/n-3 ratio.
