Con el fin de determinar si el calentamiento de la cuajada en laelaboración de los quesos afecta a sus propiedades organolépticas, seelaboraron dos tipos de quesos con leche cruda de oveja Guirra (en 3momentos de la lactación: semanas 12, 14 y 16), cuya única diferenciaentre ellos fue el calentando la cuajada a 37ºC en un tipo de queso,mientras el otro tipo se mantuvo a la temperatura de cuajado (32ºC). Serealizaron ensayos sensoriales con consumidores no expertos a los 60 y90 días de maduración.Los resultados mostraron que el calentamiento de la cuajada dio lugara un queso que fue calificado por los consumidores más duro y amarilloque el queso sin tratamiento térmico de la cuajada. Ambos tipos dequeso presentaron un olor y un sabor de intensidad media alta y fueronbien aceptados por los consumidores, particularmente con un periodode maduración de 90 días. Se puede concluir que para producir unqueso madurado de 90 días, con leche de oveja Guirra, no es necesarioaumentar la temperatura de la cuajada por encima de 32ºC, obteniendoasí un queso menos amarillo y con menor dureza.
In order to determine if heating the curd in cheesemaking affect itsorganoleptic properties, two types of cheese from raw milk sheep Guirrawere developed (in 3 moments of lactation: Weeks 12, 14 and 16), theonly difference between them was that in one of the cheese the curdwas heated at 37°C, while in the other one was maintained at the settingtemperature (32°C). Sensory tests with consumers not experts at 60 and90 days of ripening were performed.The results showed that heating the curd result in a cheese that wasdescribed by consumers as harder and more yellow than the cheesewithout heat treatment curd. Both types of cheese had a smell and ataste of medium-high intensity and were well accepted by consumers,particularly with a maturation period of 90 days. It can be concludedthat to produce a 90-day matured cheese, sheep’s milk Guirra is notnecessary to increase the temperature of the curd above 32°C, obtaininga less yellow and less hard cheese.
