It has been studied the evolution of eleven chemical parameters (free and total sulphur dioxide, alcohol, total polyphenolic content, iron (III) and total iron, total and volatile acidity, pH, reducing sugars and ethanal) in order to control the elaboration processes of red, rose and white wines, pertaining to the Denomination de Origen Empordà-Costa Brava.
