En el presente trabajo se estudia el comportamiento reológico de zumos de frambuesa. Inicialmente se estudia el efecto de la temperatura sobre dicho comportamiento, para zumo de 41º Brix, encontrándose que se comportan como fluidos que siguen la ley de la potencia, encontrando una expresión que describe la variación del índice de consistencia y viscosidad aparente con la temperatura.
Asimismo, para 25ºC, se estudia el comportamiento reológico de zumos de distinta concentración en sólidos solubles. En este caso, se comparan expresiones de tipo potencial y exponencial que correlacionan el índice de consistencia con la concentración, obteniéndose que la de tipo exponencial produce un mejor ajuste.
The present paper studies the rheological behaviour of raspberry juices. The effect of temperature on this behaviour for raspberry juice of 41º Brix is studied and equations are found to describe the variation in apparent viscosity at a specific shear rate and consistency index with temperature within the temperature range studied.
The rheology of raspberry juices of different concentrations in soluble solids at 25ºC is likewise studied and equations power and exponential-types are found to describe the variation in consistency index with this concentration in the concentration interval studied. The exponential relationship yielded a better fit than the power-type relationship.
It is observed in all cases that power-law of viscosity describes the rheological behaviour of the juices, excepted when the concentration in soluble solids is low.
