Se describe la formación de la cocina patrimonial de la región de Toluca como primer paso para su investigación culinaria. Se utilizó información etnohistórica de primera mano (cronistas) y la consulta de libros, recetarios, tesis y otros documentos, relacionándolos con las características ambientales y culturales del Valle de Toluca. Se identificaron las especies animales y vegetales, así como las prácticas agrícolas-culinarias que trajeron consigo los españoles y su fusión con sus similares locales, lo que produjo el mestizaje gastronómico en el Valle de Toluca expresado en sus platillos patrimoniales: barbacoas, embutidos, moles, tamales, dulces y bebidas tradicionales.
The purpose of this paper is todescribe the formation of the culinary heritagein the region of Toluca, as a first step in itsgastronomic research. In order to obtainthis, first-hand ethnohistorical information(from chroniclers) was used, as well as thereview of projects, thesis and other publisheddocuments, relating them with the culturaland environmental characteristics of the Vallede Toluca. The animal/vegetable species andculinary/agricultural practices the Spaniardsbrought with them are identified, which werethen integrated with the local ones in orderto produce the gastronomical mixture at Vallede Toluca, which is expressed in its traditionalfoods: barbacoas, hams, moles, tamales,candies and drinks.
