The obtaining of olive oil as a food is known from Prehistory, since 6000 years before Christ. From the fruit of olive trees, the olives, a yellowish, transparent and aromatic liquid is extracted only by means of pressure, which is used to season, cook and preserve the food.
Olive oil culture has been linked to the Mediterranean basin from time immemorial, and it has been so strong that we could say that Mediterranean culture disappears close to the border where also disappear olive trees.
At this conference, we will talk about the different types of olive oils, their composition, and mainly, the effects of olive oil on the prevention of cardiovascular risk, describing the PREDIMED Study; and its effects on certain diseases like cancer. Finally, I will conclude with the newly scientific bases that have been established which will draw future investigations.
