Cultura gastronómica del pueblo Puruhá de la parroquia Cacha centro de la provincia de Chimborazo

    El objetivo de la investigación es identificar la cultura gastronómica del pueblo Puruhá de la parroquia Cacha, salvaguardando el Patrimonio Cultural Culinario de la nación ecuatoriana. La Metodología utilizada en la presente investigación es de tipo observacional y de corte transversal. La población de estudio se compone de 30 personas conocidas como yuyacunas, mención que reciben aquellos que son considerados como los más sabios dentro de la comunidad. De los resultados obtenidos se pudo establecer que existen tradiciones importantes en el sector, obteniendo el 16% de los encuestados consideran a la Minga Comunitaria con sus comidas tradicionales, el 10% el Rutuchi, 20% el Carnaval, 16,67% Semana Santa, 16,67% finados, como las festividades que caracterizan a la región, la gastronomía propia en cada una de las fechas indicadas. Una de las festividades con gran relevancia es el Pawkar Raimy, es una celebración vinculada con la fertilidad de la tierra y la buena cosecha, el ciclo agrícola que celebra el equinoccio de invierno, tiempo en el cual la tierra florece y se le agradece a la Pacha Mamapor su generosidad. Teniendo como resultados de esta investigación 18 recetas gastronómica tradicionales que se han transmitido a diferentes generaciones. Se recomienda seguir investigando la cultura gastronómica aborigen no solo de Cacha sino de todas las provincias del Ecuador.

    The objective of the research is to identify the culinary culture of the Puruhá people of the Cacha parish, safeguarding the Culinary Cultural Heritage of the Ecuadorian nation. The methodology used in the present investigation is observational and cross-sectional. The study population consists of 30 people known as yuyacunas, mentions that are considered to be the wisest within the community. From the results obtained it was established that there are important traditions in the sector, with 16% of the respondents considering the Community Minga with their traditional meals, 10% the Rutuchi, 20% the Carnival, 16.67% Holy Week, 16.67% finados, like the festivities that characterize the region, the own gastronomy in each one of the indicated dates. One of the festivities with great relevance is the Pawkar Raimy, it is a celebration linked to the fertility of the earth and the good harvest, the agricultural cycle that celebrates the winter equinox, time in which the earth blooms and you are grateful to the Pacha Mama for your generosity. Taking as results of this investigation 18 traditional gastronomic recipes that have been transmitted to different generations. It is recommended to continue investigating the aboriginal gastronomic culture not only of Cacha but of all the provinces of Ecuador.
