This research analyzes the quality attributes of a restaurant using the Kano model, which facilitates the determination and analysis of customer requirements by prioritizing their needs. Its objective is to determine those factors that generate satisfaction and dissatisfaction to identify the service components that add value to the consumer. The research design is observational and descriptive, of a cross-sectional cohort, which uses data from a sample of the company’s customer segment, calculated with the probabilistic stratified sampling technique. The variables studied are qualitative, measured from the application of an instrument that considers 19 attributes that include the tangible and intangible characteristics of the product and service offered by the company, the current behavior of its customers (customs and preferences), the safety and hygiene regulations imposed by the government due to the pandemic caused by COVID-19, as well as the economic possibilities of the company for adaptation. Only attributes that describe what customers value and find attractive were detected. However, if absent, they did not generate dissatisfaction (attractive). Furthermore, those where the level of satisfaction is proportional to the degree of presence of said characteristic in the service (unidimensional), but no quality attributes were found that, if not met, would lead to solid customer dissatisfaction (mandatory), nor were those that do not generate a feeling of satisfaction or dissatisfaction when they are present or absent (indifferent).
