Las fondas y sus alimentos artesanales como fuente de atracción turístico gastronómico en la ciudad de Puebla

    El presente trabajo de investigación tuvo como objetivo determinar la influencia de las fondas y sus alimentos artesanales como fuente de atracción turístico gastronómico en la ciudad de Puebla. Se realizó una investigación de carácter exploratorio y una revisión documental, así mismo el uso de fuentes secundarias de información sobre temas relacionados con; fondas, comida artesanal y turismo gastronómico obtenidas de artículos, revistas, informes y sitios de internet. Por último, se complementó con una investigación de campo sobre las fondas y su gastronomía en el centro histórico de Puebla. Los resultados obtenidos determinan que el estado de Puebla tiene una gran importancia por el desarrollo de su cultura y que ocupa actualmente el cuarto lugar en la actividad turística a nivel nacional en México y al generar una favorable derrama económica, así mismo de ser una Ciudad Patrimonio de la Humanidad por la UNESCO donde destacan su centro histórico y su cocina tradicional mexicana que permiten fortalecer el turismo. Por lo que se concluye que esta ciudad es altamente competitiva en materia de turismo en cuanto a su historia, cultura y cocina al ofrecer una variedad de platillos típicos artesanales en la cual los visitantes aprovechan las fondas para degustarlos.

    The current research has the objective of determining the Fondas’ influence and their artisanal foods as a form of attracting gastronomic tourism to the city of Puebla. Exploratory research was conducted that included the revision of documents. There were also secondary information sources related to: Fonda’s, artisanal foods and gastronomic tourism obtained from articles, magazines, reports, and internet sites. Lastly this research was complimented with field research on Fonda’s and their gastronomy in the historical Centre of Puebla. The results obtained allowed us to determine that the city of Puebla is of great importance to the development of its culture, it is currently fourth place in domestic tourism, and it generates an important increase in economic activities. Puebla is also a UNESCO Heritage Site where you can enjoy its historical center and its traditional Mexican cuisine. Therefore, we conclude that this city is highly competitive in the tourism area related to history, culture, and gastronomy by offering a great variety of traditional dishes which visitors take advantage of the Fonda’s to enjoy them.
