Fatty acid profile from twenty-one suckling lambs included in the quality label “Lechazos Montañas de Liébana” was studied. Suckling lambs were kept with their mothers and fed exclusively maternal milk until 35 days (6,74 kg carcass). During milking grazing ewes were fed conserved forage and concentrate indoors. Longissimus thoracis samples were used. Fatty acid was identified/quantified by gas chromatography/mass spectrometry. Fatty acid profile showed relatively high % of saturated, polyunsaturated and n-3 fatty acids and relatively low % of monounsaturated fatty acids. Polyunsaturated/saturated fatty acid ratio average value was higher than 0,45 and the n-6/n-3 fatty acid ratio average value was lower than 4, fitting international recommendations of health authorities.
