An in-situ quality control analysis, quantitative (i.e. fatty acid prediction) and qualitative (i.e. feeding regime classification), in the pig carcass process line at the slaughterhouse is evaluated using a handheld micro-electro-mechanical (MEMS)-based Near Infrared (NIR) spectrometer. Based on the models obtained, a Graphical User Interface (GUI) was developed for automatic data analysis considering: spectra repeatability, classification of Iberian pig carcasses on different feeding regime categories and prediction of the major fatty acids composition. These parameters were included in a support decisionmaking system based on an android mobile application for a fast, simple, easy, economically efficient, reliable, objective and individual quality control of Iberian pig carcasses.
