La producción de cordero lechal confitado de raza Ojinegra de Teruel es una forma dediversificar los productos derivados del cordero. Por ello, es necesario encontrar el tiempoóptimo de confitado de lechal de raza Ojinegra de Teruel desde un punto de vista sensoriale instrumental. Adicionalmente, se estudió el tiempo de dorado del lechal sobre el color dela carne y de la grasa. Se evaluó sensorialmente por consumidores no entrenados la carnede cordero confitada durante 1, 1,5, 2, 2,5 y 3 horas. Se observaron mejoras sensorialescuando se incrementa el tiempo de confitado de una hora a dos, mientras que el aumentodel confitado entre dos y tres no aportó ninguna mejora desde el punto de vista de preferenciasde los consumidores. Sin embargo, ni la terneza sensorial ni la instrumental se vieronafectadas por el tiempo de confitado. El tiempo de dorado del lechal entre 0, 15, 30, 45,60 y 120 min no modificó el color ni de la grasa subcutánea ni del Longissimus thoracis etlumborum.
The production of confited suckling lamb of Ojinegra de Teruel is a way to diversify theproducts derived from lamb. For this reason, it is necessary to find the optimum time ofconfiture from a sensorial and instrumental point of view. In addition, the browning timeof suckling lamb was studied on the color of the meat and the subcutaneous fat. Confitedlamb was sensory evaluated by untrained consumers for 1, 1.5, 2, 2.5 and 3 hours. Sensoryimprovements were observed when increasing the confit time from one hour to two,while the increase between two and three hours did not bring any improvement from thepoint of view of preferences of the consumers. However, neither sensory nor instrumentaltenderness was affected by the confectionery time. The browning time of the suckling lambbetween 0, 15, 30, 45, 60 and 120 min did not modify the color of either the subcutaneousfat or Longissimus thoracis et lumborum.
