      El ácido ascórbico (AA) es una vitamina esencial en la dieta humana, y su determinación por técnicas sensibles y rápidas, es importante para evaluar su estabilidad en diferentes alimentos. Actualmente la búsqueda de fuentes naturales de AA, reviste gran interés por las características antioxidantes de la vitamina; la uchuva (Physalis peruviana L.), fruto silvestre de los Andes suramericanos, registra contenidos de 20 a 32 mg de AA por cada 100 g de pulpa, siendo así, un cultivo promisorio para incluir en los registros de las fuentes comunes de esta vitamina. El objetivo principal de este estudio, fue encontrar las condiciones óptimas para la extracción, identificación y cuantificación por cromatografía líquida de alta resolución (CLAR) del AA presente en la uchuva (Physalis peruviana L.); para ello se analizaron diferentes metodologías reportadas para el proceso de extracción. Por el método del ácido fosfórico se encontraron porcentajes de recuperación entre el 92,36 y100,4 %; las condiciones de operación más adecuadas para la cuantificación del AA por CLAR, fueron, fase móvil: NaH2PO4 al 1 % pH = 2,7; fase estacionaria: Hypersil C18 ODS µ5 m x 4,0 mm x 250 mm; longitud de máxima absorción: 265 nm y un flujo: 0,9 mL/min. La metodología de cuantificación presentó linealidad, precisión, exactitud y sensibilidad a un nivel de confianza del 95%. El contenido de AA determinado para la uchuva fue de 0,3320mg ( s 0,0262)/g de muestra, la estandarización del método de cuantificación del AA por CLAR ofrece la oportunidad de realizar posteriores investigaciones acerca de la estabilidad de la vitamina en la uchuva.

      The ascorbic acid (AA) it is an essential vitamin in the human diet, and their determination for sensitive and quick technical, it is important to evaluate their stability in different foods. At the moment the search of natural sources of AA, had great interest for the antioxidants characteristics of the vitamin; the gooseberry (Physalis peruviana L.), tropical fruit of the South American Andes, registers contents from 20 to 32 mg of AA for each 100 g of pulp, being this way, a promissory cultivation to include in the registrations of the sources common of this vitamin. The main objective of this study, was to find the optimize conditions for the extraction, identification and quantification by high-performance liquid chromatography (HPLC) of the present AA in the gooseberry (Physalis peruviana L.); for they were analyzed it different reported methodologies, for the extraction process. The phosphoric acid method, of they were recovery percentages between the 92,36 and 100,4 %; the most appropriate operation conditions for the quantification of AA for HPLC, were: Mobile phase: NaH2PO4 to 1 % pH = 2,7; Stationary phase: Hypersil C18 ODS 5µ m x 4,0 mm x 250 mm; Maximum absorption wavelength of: 265 nm and a Flow: 0,9 mL/min. The quantification methodology presented linealidad, precision, accuracy and sensibility at a level of trust of 95 %. The content of certain AA for the gooseberry was of 0,3320 mg (± 0,0262)/g sample, the standardization of the method of quantification of the AA for HPLC offers the opportunity to carry out later investigations about the stability of the vitamin in the gosseberry.
