Today there is the need to find alternatives for obtaining oligofructosaccharides (FOS), because, these compounds are widely used as low-energy substitutes and non- carcinogenics in the food industry. The main sources of obtaining FOS are Helianthus tuberosu, Cichorium intybus, Tequilana weber, however, there may be other vegetables alternatives for their obtaining less conventional such as E. crassipes. The objective of this work was to determinate optimum conditions of fructans extraction process from E. crassipes, which was used in phytoremediation of effluents from aquaculture previously. This project provides an alternative to use of this plant species abundant.
