In 2010 the state of Hidalgo occupied the 6th place of marginalization at the national level (CONAPO 2010) mainly in the huasteca region, which although in the indigenous communities have conditions for the manufacturing of food products, it does not has the tools for the conservation and availability in times of scarcity, for its consumption or for marketing like the food enterprise make it. In this project were evaluated the conservation method by solar drying in order to preserve the products of the region, grown in the orchards of the huasteca families and give them a value added to extended their useful life.Were determined the dry kitenics in seasonal products such as: cassava, sweet potato, squash, jícama, chaya, mint, rue, pigweed and banana apple, subjecting to solar drying using a dehydrator type made from recycled material, obtaining times Dehydration óptimal for each one of them, it provides an option for huasteca families can make efficient use products harvested from their gardens, encouraging their income and thus promote sustainable development by using solar energy as the main source for carrying out the dehydration process.
