El objetivo de este trabajo fue evaluar el efecto de la adición de 3% de fibra de nopal (FN) o cacao (CA), sobre las características fisicoquímicas, texturales, contenido nutricional y aceptación sensorial de carne tipo hamburguesa. Se elaboraron 144 hamburguesas, que se dividieron en tres grupos: Control (TC), sin adición; HN: 3% FN y HC: 3% CA. Se realizaron pruebas fisicoquímicas (pH, Aw), texturales (TPA) y de color instrumental (CIELab) a distintos intervalos de tiempo (0, 2, 7, 14 y 28 días), además del contenido nutritivo y una prueba de preferencia. El pH incrementó similarmente en todos los tratamientos al día 28 (P>0.05), la adición de cacao disminuyó la luminosidad (P<0.05) y mantuvo valores elevados de a* (P<0.05), mientras que el valor de b* fue más bajo con la adición de cacao.
La textura se mostró similar en todos los tratamientos (P>0.05) disminuyendo con el tiempo, mientras que la Aw se mantuvo estable (P>0.05). La inclusión de FN y CA aumentó el contenido de fibra (P<0.05). La hamburguesa con adición de FN mostró gusto moderado. La adición de FN y CA no disminuyó la aceptación del consumidor, por lo que podrían ser utilizados como ingredientes en el desarrollo de alimentos funcionales.
The objective of this work was to evaluate addition effect of 3% of nopal fiber (FN) and cacao powder (CA) on the physicochemical, nutritional content and sensory acceptation of patty meat. A total of 144 patties were elaborated in three different batches: Control (TC) no addition; FN with 3% of FN; and CA with 3% of CA. Physicochemical tests (pH, Aw), texture (TPA) and instrumental color (CIE-Lab) at different storage times (0, 2, 7, 14 and 28 days), besides to nutritional content and acceptation test. pH increased in all the treatments at 28 days of storage, where CA addition decreased luminosity (P>0.05) and maintained higher a* values (P<0.05), meanwhile b* value was lower in CA samples.
Texture was similar in all the treatments decreasing with storage time, meanwhile Aw was stable (P>0.05). FN or CA addition increased fiber content (P<0.05). Patties with FN showed a moderate acceptation. Since addition of FN or CA did not decreased consumer acceptation, these can be employed as ingredients in the development of functional foods.
