    En Colombia se controlan las normas sanitarias mediante regulaciones que se basan en lo estipulado por la FAO en el Codex Alimentarius, siendo el INVIMA el ente regulador y de vigilancia sanitaria, quien controla que se cumplan dichas normas para evitar el mal manejo de alimentos y así garantizar la seguridad alimentaria, por lo anterior, se plantea como objetivo establecer el grado de conocimiento y aplicación de las normas sanitarias durante la manipulación, preparación y expendio de comidas rápidas en ventas callejeras fijas y móviles de siete comunas del municipio de Ibagué mediante el método Fisher y el método t student identificando que los establecimientos fijos tienen mayor conocimiento (39,21%) sobre la norma.

    In Colombia, sanitary standards of Quality are regulated by the stipulations of the FAO in the Codex Alimentarius, with INVIMA being the regulatory and sanitary surveillance entity. INVIMA ensures that these standards are met to prevent mishandling of food and ensure food safety. The objective of this study is to establish the degree of knowledge and application of sanitary norms during the handling, preparation, and sale of fast foods in both fixed and mobile street vendors in seven Neighborhoods of the municipality of Ibagué. This will be achieved using the Fisher method and the t-student method, identifying that fixed establishments have greater knowledge (39.21%) of the norms.
