Renin-Angiotensin System (RAS) is one of the most important physiological mechanism involved in the regulation of blood pressure (BP), both circulating and local RAS. These mechanisms interact with the Sympathetic Nervous System and Nitric Oxide (NO), and it is especially important the study of the relationship between factors causing vasoconstriction or vasodilation. On the other hand, it is well known that hypertension is a multifactorial disease, closely associated with environmental factors, mainly diet. Several studies have analyzed the preventive effects of virgin olive oil (VOO) on however the effects on BP are not completely understood. Our research is based on the hypothesis that the pharmacological blockade of the RAS, the sympathetic activity or the synthesis of NO in SHR rats, could modify the aminopeptidase activities involved in angiotensins metabolism, affecting the BP control. Furthermore, the supplementation of the diet with VOO, before the development of hypertension, could result in a delay of the increase of BP levels in SHR.
