    Como parte de una investigación más amplia y compleja, este artículo pretende identificar y describir los principales problemas que afectaron a los consumidores y abastecedores de harinas en Buenos Aires colonial y su tratamiento por parte de las autoridades, a partir del análisis de diversos documentos oficiales. Destacamos la importancia de la harina, por su relación con los mercados del trigo y como materia prima fundamental para la elaboración y el consumo de pan. Dentro de este período, Buenos Aires se vio atravesada por cambios muy importantes, como la intensificación de las reformas borbónicas y la apertura de las revoluciones de independencia, pasando por el crecimiento demográfico y de la demanda de alimentos, bienes y servicios. Concluimos afirmando que las principales causas de los problemas que afectaron al común del Pueblo estuvieron relacionadas con la escasez de trigo, las dificultades para moler, y la imposibilidad de almacenar los productos en buenas condiciones.

    As part of a larger and more complex investigation, this article aims to identify and describe the main problems that affected consumers and suppliers of flour in colonial Buenos Aires and their treatment by the authorities, base don the análisis of various official documents. We highlight the importancia of flour, due to its relationship with the wheat markets and as a fundamental raw material for the preparation and consumption of bread. Within this period, Buenos Aires was crossed by very important changes, such as the intensification of the Bourbon reforms and the opening of the Independence revolutions, going through demographic growth and the demand for food, merchandise and services. We conclude by affirmating that the main causes of the problems that affected the Common People were related to the shortage of wheat, the difficulties in grinding, and the impossibility of storing the products in Good conditions
