In this work, a canned cider based on panela was elaborated in different concentrations of fruit pulp at 30-35% and 70-65% of panela as a preservative; the shelf life was estimated at 1, 15 and 30 days stored in a glass container at room temperature (15 ° C and relative humidity (RH) between 70 and 82%); To perform the microbiological analysis of the product, yeasts and fungi, microorganisms, Staphylococcus aureus were determined, in the physical analysis, color, appearance and smell were determined.
