    Desde los primeros años de historia de Puerto Real las canteras formaron parte significativa de su economía y por tanto de la forma de vida de algunos de sus vecinos. En este trabajo se aportan datos para tratar de acercarnos a las que estuvieron activas en su territorio entre los siglos XVI y XVIII, centrándonos sobre todo en las de la Atalaya de Barguetas, ubicadas cerca del término municipal de Jerez de la Frontera, y las del Sitio de Troya, espacio que se corresponde con el actual pinar de Las Canteras, apuntando así mismo, entre otros aspectos, los principales destinos que tuvieron sus piedras. Igualmente se esboza la importancia que tuvo en ese mismo periodo la producción de cal y yeso en esta villa, productos también vinculados a las canteras.

    From the first years of Puerto Real’s history, the quarries formed a significant part of its economy and therefore of the way of life of some of its inhabitants. In this work, data is provided to try to get closer to those that were active in its territory between the 16th and 18th centuries, focusing on those of the Atalaya de Barguetas, located near the municipality of Jerez de la Frontera, and those of the Sitio de Troya, a space that corresponds to the current pine forest of Las Canteras, also pointing out, among other aspects, the main destinations that its stones had. It also indicates the importance that the production of lime and gypsum in this town had in that same historical period, products also linked to the quarries.
