The food and beverages industry is required to adapt to an increasingly complex and constantly changing environment and market. Digital technologies, in general, and artificial intelligence, in particular, can play a key role in helping firms in this industry face this challenge and in boosting the quality and safety of their products. This article identifies the main problems arising from the capillarization of digital technologies in society as well as some solutions and methods being used today to guarantee product quality and safety. In view of the limitations of these methods and solutions and to face the changing paradigm for quality and safety in the production of food and beverages, this article describes different experiences in the application of artificial intelligence techniques in various fields, and their impact in business terms for the industry. Finally, the article mentions the main challenges in the application of these technologies in order to make progress beyond the state of the art.
