    En el sector gastronómico es importante el desarrollo organizacional y la construcción de acciones en pro de la calidad y el buen servicio, por ende, la investigación tuvo como objetivo conocer sobre la cultura gastronómica en el municipio de Ocaña, identificando de manera previa las características, la satisfacción y las preferencias del consumidor, logrando desde un estudio cuantitativo aplicar la técnica de la encuesta a los consumidores que habitualmente asisten a los restaurantes de la zona céntrica, ahora bien, con los resultados obtenidos de los cuestionarios, se analizó que la gastronomía no promueve innovación de forma permanente, con esto se recomienda al sector implementar una gastronomía especializada que construya un cambio en la alimentación y permita crear en el paladar del consumidor identidad a través de la oferta de comidas locales, nacionales e internacionales.

    The gastronomic sector it promotes the organizational development and the construction of actions in favor of a regional identity, therefore, the investigation had as objective to know about the gastronomic culture in the municipality of Ocaña, identifying in a previous way the characteristics, the satisfaction and the preferences of the consumer, achieving from a quantitative study to apply the technique of the survey to the consumers who habitually attend the restaurants of the central zone, However, with the results obtained from the questionnaires, it was analyzed that gastronomy does not have innovation, with this it recommends to the sector to implement a specialized gastronomy that builds a change in the feeding and allows to create in the palate of the consumer identity through the offer of local, national and international foods.
