  En este número de la revista Entretextos se presentan diversas revisiones sobre la nutrición y su relación con la salud y la enfermedad, se resalta la importancia de los alimentos desde el punto de vista nutricional y el papel de la nutrición desde un enfoque multifuncional para el humano. Gracias a los avances en el conocimiento sobre las diferencias existentes entre los individuos como respuesta a una dieta, ahora sabemos que el componente genético es un factor clave importante para la respuesta del individuo. Por lo que surgen áreas como nutrigenética y nutrigenómica que tratan de estudiar las interacciones entre el genoma y los nutrientes a nivel molecular ya que se ha comprobado que muchas de las moléculas presentes en los alimentos pueden alterar la expresión genética directa e indirectamente e influir de manera positiva o negativa en vías de señalización y en el metabolismo celular.

  This issue of Entretextos presents several reviews on nutrition and its relationship with health and disease, highlighting the importance of food from a nutritional point of view and the role of nutrition from a multifunctional approach for humans. Thanks to the advances in the knowledge about the existing differences between individuals in response to a diet, we now know that the genetic component is an important key factor for the response of the individual. Therefore, areas such as nutrigenetics and nutrigenomics have arisen that try to study the interactions between the genome and nutrients at the molecular level, since it has been proven that many of the molecules present in food can alter gene expression directly and indirectly and have a positive or negative influence on signaling pathways and cellular metabolism.
