En este trabajo se realiza un breve análisis desde la antropología de la alimentación acerca de una forma de resistencia cultural de un patrimonio intangible, la permanencia de los tamales en nuestra dieta a pesar de las hibridaciones producto de la invasión europea hace más de 500 años así como de otros fenómenos que han influido en nuestra historia culinaria y cultural como país.
Se intenta exponer la forma en la que un alimento detona la configuración de ciertas relaciones interpersonales y espaciales y ocupa por tanto un lugar de fundamental importancia en el conjunto de expresiones de las culturas y sus cosmovisiones. Es fundamental de sacar la importancia de estas herencias que están internalizadas y que van con nosotros aún al sitio más remoto, configuraciones expresivas poco abordadas desde las humanidades y que representan otra forma esencial de ser y habitar en nuestro país y en el caso concreto del noreste mexicano.

In this work a brief analysis is made from the anthropology of food about a form of cultural resistance of an intangible heritage, the permanence of tamales in our diet despite the hybridizations product of the European invasion more than 500 years ago as well as well as other phenomena that have influenced our culinary and cultural history as a country.It tries to expose the way in which a food detonates the configuration of certain interpersonal and spatial relationships and therefore occupies a place of fundamental importance in the set of expressions of cultures and their worldviews. It is essential to draw out the importance of these legacies that are internalized and that go with us even to the most remote place, expressive configurations little addressed from the humanities and that represent another essential way of being and living in our country and in the specific case of the Mexican northeast.
