Contribución y crecimiento a la economía de México de la industria cárnica en el período 1993-2020

    El objetivo de esta investigación fue cuantificar la contribución de la industria cárnica mexicana al PIB nacional, así como calcular la Tasa Media de Crecimiento Anual (TMCA) durante un periodo de 28 años que va desde 1993 a 2019, que considera los últimos cuatro periodos sexenales, además determinar el aporte de su PIB en la de las industrias alimentaria y manufacturera y en la economía nacional. La metodología que se usó fue de tipo documental con las siguientes etapas: i) Selección del tema a estudiar, ii) Acopio de información de fuentes documentales secundarias, la cual fue fundamentalmente de las Cuentas Nacionales del INEGI, iii), Elaboración del plan de investigación, iv) Organización de la información, para lo cual se utilizó el Sistema de Clasificación Industrial de América del Norte (SCIAN) del INEGI y v) Utilización de la función estadística que para el caso fue la TMCA. Se encontró que la industria cárnica presentó a lo largo del periodo una tendencia de tipo positiva, con una TMCA de 2.59% y con un paralelismo con la industria alimentaria, ambos ramos industriales se engloban en la industria manufacturera. La industria cárnica tuvo en promedio (28 años) una participación del 0.81% en el PIB nacional y su importancia escala al 4.78% de la industria manufacturera y alcanzó poco más de la quinta parte (21.68%) en la industria alimentaria, finalmente la industria de la carne forma parte esencial dentro de la canasta básica de la dieta del pueblo mexicano.

    The objective of this research was to quantify the contribution of the Mexican meat industry to the national GDP, as well as to calculate the average annual growth rate (TMCA) during the period (28 years), as well as the last four six-year periods and to determine the contribution to the manufacturing industry.

    The methodology was use of a documentary type with the following stages: i) Selection of the subject to study, ii) Collection of information from secondary documentary sources, which was fundamentally from the National Accounts of INEGI, iii), Preparation of the research plan, iv) Organization of the information, for which the INEGI Industrial Classification System of North America (SCIAN) was used and v) Use of the statistical function, which for the case was the TMCA.

    It was found that the meat industry presented a positive trend throughout the period, with a TMCA of 2.59% and with a parallel with the manufacturing industry, which is the sector that includes the meat industry. The meat industry had on average (28 years) of 0.81% in the national GDP and its importance scales to 4.78% of the manufacturing industry and reach just over a fifth (21.68%) in the food industry, finally the industry of meat is an essential part of the basic food basket of the Mexico people.
