La paella como candidatura del patrimonio alimentario y el “arroz con cosas” como peligro para su salvaguardia

    Con esta aportación pretendemos contribuir al mejor conocimiento, no sólo del patrimonio inmaterial, sino también del espíritu de la Convención de 2003 y del funcionamiento de los dispositivos previstos por la Unesco para su salvaguardia. A pesar del escepticismo inicial, las tradiciones alimentarias han centrado muchos de los debate sobre la protección del patrimonio inmaterial, por lo que nos ofrecen un magnífico escaparate para mostrar las paradojas que rodean a este tipo de expresiones. Por otra parte, la avalancha de candidaturas a «Patrimonio Inmaterial de la Humanidad», a pesar de la inconsistencia de muchas de ellas, nos permite identificar algunos tics de los que está costando desprenderse, al menos en lo que a su presentación formal se refiere. Sin entrar en valoraciones previas de ningún tipo, nos proponemos reflexionar sobre la paella valenciana como posible candidata a Patrimonio Inmaterial de la Humanidad, cuando los medios de comunicación han apuntado a ello de forma insistente. Para ello, y tomando como punto de partida titulares de prensa, declaraciones institucionales y el propio decreto de su reconocimiento como Bien de Interés Cultural Inmaterial, la situamos en el camino marcado por otras tradiciones gastronómicas que han supuesto un hito en la breve historia de esta categoría patrimonial, especialmente la pizza napolitana, la dieta mediterránea y la comida gastronómica de los franceses.

    With this contribution we intend to contribute to a better knowledge, not only of the intangible heritage, but also of the spirit of the 2003 Convention and of the operation of the devices provided by Unesco for its safeguarding. Despite the initial skepticism, food traditions have focused many of the debates on the protection of intangible heritage, which is why they offer us a magnificent showcase to show the paradoxes that surround this type of expression. On the other hand, the avalanche of candidacies for «Intangible Heritage of Humanity», despite the inconsistency of many of them, allows us to identify some tics that are difficult to get rid of, at least as far as their formal presentation is concerned. Without going into prior evaluations of any kind, we propose to reflect on the Valencian paella as a possible candidate for Intangible Heritage of Humanity, when the media have insistently pointed to it. For this, and taking as a starting point press headlines, institutional declarations and the decree of its recognition as Bien de Interés Cultural Inamterial, we place it on the path marked by other gastronomic traditions that have been a milestone in the brief history of this patrimonial category, especially the Neapolitan pizza, the Mediterranean diet and the gastronomic food of the Frenc
