  Entre el instrumental quirúrgico existe una variedad de instrumentos que necesitan ser afilados regularmente. El proceso de afilar exige un conocimiento de los materiales y de las técnicas a seguir por parte del operario. Un afilado bien realizado obtendrá un filo adecuado, permitiendo cortes más fiables y precisos con menos esfuerzo. Los instrumentos cortantes afilables están generalmente realizados en acero para instrumental médico que suele tener un grado de inoxibilidad elevado y una ductibilidad adecuada. El denominado acero quirúrgico no es más que una subdivisión de este. El acero es una aleación de hierro y carbono por debajo del 2%. Si aleamos, además, cromo por encima del 10%, estaremos ante un acero inoxidable.

Il denominato acciaio chirurgico non è altro che una suddivisione dello stesso. L'acciaio è una aleazione di ferro e carbono al di sotto del 2%. Se si aleaziona anche cromo al di sopra del 10%, si ottiene acciaio inossidabile.
