Se estudió la pulpa liofilizada de tomate de árbol y sus hidrolizados gastrointestinales obtenidos con amilasa, pepsina y pancreatina, en sus respectivas fases, para evaluar la actividad antioxidante y la actividad antiinflamatoria. La capacidad antioxidante estuvo en un rango de 248,94±12,34 a 335,22±34,35 µmol ET/g, los valores más altos corresponden al tomate de árbol en la fase de digestión gástrica. La actividad antinflamatoria, medida en porcentaje de protección, estuvo en un rango de 8,11±0,04 % a 20,36±0,02 %, el tomate de árbol al final de la digestión duodenal obtuvo el valor más alto.
The lyophilized tree tomato pulp and its gastrointestinal hydrolysates obtained with amylase, pepsin and pancreatin were studied in their respective phases to evaluate the antioxidant and anti-inflammatory activity. The antioxidant capacity was in a range of 248.94±12.34 to 335.22±34.35 µmol TE/g, the highest values correspond to the tree tomato in the gastric digestion phase. The anti-inflammatory activity, measured in percentage of protection, was in a range of 8.11 ± 0.04 % to 20.36 ± 0.02 %, the tree tomato at the end of duodenal digestion obtained the highest value.
