In this paper, the authors indicate the need for a better understanding of the stabilisation processes of urban organic wastes. The composting process is a method to change fresh organic matter into a material more humificated and less harmful. This process is carried out by a great quantity of microorganisms. We think that the changes in the organic wastes during its stabilisation should be studied by several biological and biochemical parameters (ATP, basal respiration, enzyme activities ... ). These parameters are good biomarkers of the microbiological activity.
