Resumen de Perfil de ácidos grasos de la grasa intramuscular en cabritos castrados y sacrificados a los 7-8 meses de edad producidos en pastos de montaña de los picos de Europa

Fatty acid profile from five castrated kids was studied. Kids were kept with their mothers and pasture fed at Picos de Europa until 7-8 months (12,8 kg average carcass weight). Longissimus thoracis samples between 12th and 13th rib were used. Fatty acids were identified and quantified by gas chromatography/mass spectrometry. Fatty acid profile showed low percentages of saturated fatty acids and low values of the ratio n-6/n-3 and the atherogenic index. Besides, fatty acid profile displayed high percentages of polyunsaturated fatty acids (especially n-3) and high values of the desirable fatty acids index and the polyunsaturated/saturated fatty acid ratio.
