Resumen de Perfil de ácidos grasos de la grasa subcutánea en terneros Limusín y Tudanca x Charolés producidos en el valle del nansa (Cantabria)

  • This study was designed to compare the fatty acid composition of backfat from veal produced from ‘Tudanca x Charolais’ cross (n=6) and Limousin (n=6) breeds when allowed to feed freely on mountain pastures and suckled naturally their mothers from birth to 7 months of age. After 80 days of age calves also had access to concentrate (maximum of 3 Kg/day), while cows did not. In general, very few differences were observed between backfat profiles of both genotypes except for slight differences in some of the individual trans-18:1 and CLA isomers. Moreover, vaccenic and rumenic acids were the major trans double bond containing biohydrogenation isomers in all animals making their fat healthier in comparison to fat obtained from concentrate fed animals.
