Resumen de Conocimiento del uso de hierbas y especias en la culinaria otavaleña, con enfonque hacia el marketing gastronómico

  Se realizó un estudio dirigido a establecer el estado actual del conocimiento local sobre el uso de hierbas y especias en la gastronomía del pueblo indígena kichwa Otavalo, Provincia de Imbabura, Ecuador. Además, identificar el vínculo entre este conocimiento y las acciones que se podrían establecer en un marketing gastronómico más asertivo. A través de un inventario acerca de las especias encontradas cuya información fue analizada mediante la matriz etnobotánica IVIER y clúster, y una revisión de bibliografía especializada en marketing. Esta investigación contiene dos partes bien diferenciadas, una consiste en la investigación de hierbas y especias en la gastronomía local, la otra parte que reside en la revisión de la literatura especializada para sugerir diferentes acciones de marketing que pueden adoptar empresarios del sector turístico, gastronómico y de marketing.

  The study was carried out aimed at determining the current state of local knowledge about the use of herbs and species in the gastronomy of Kichwa Otavalo, Imbabura Province, Ecuador. In addition, identify the link between this knowledge and the actions that could be established in an assertive gastronomic marketing. Through an inventory of plants about the species found whose information was analyzed through the IVIER ethnobotanical matrix and cluster, and a review of literature specialized in gastronomic marketing. This research contains two well-differentiated parts, one consists of the investigation of herbs and species in the local gastronomy, the other part resides in the review of the specialized literature to suggest different marketing actions that can be adopted by entrepreneurs in the tourism, gastronomy and marketing sectors.
