El objetivo de esta investigación fue determinar los patrones deconsumo de carne bovina en la región del Papaloapan, Veracruz,México con la finalidad de conocer las características de la ofertade carne de bovino y las que demanda el consumidor; además decomprobar si existen fallas de mercado. Se seleccionaron sietemunicipios, que en su conjunto, representan 38.8% de la poblacióntotal regional y el mayor inventario bovino regional (63.3%).Se diseñó una encuesta y se aplicaron 286 entrevistas semiestructuradasa consumidores, a la salida de carnicerías y mercadosmunicipales. Se calculó medidas de tendencia central, dispersióny se hicieron tablas de contingencia. La frecuencia de consumofue de una a tres veces por semana. La mayoría de los consumidores(76.9%) desconoce la procedencia, raza y tipo de bovinode carne que está adquiriendo. De los consumidores, 42% estádispuesto a pagar 5% de sobreprecio si se certificara que la carnepresenta calidad e inocuidad. Las cantidades y frecuencia de consumoson similares a lo reportado a nivel Latinoamericano.
The objective of this research was to determine the beefconsumption patterns in the Papaloapan region, Veracruz,México, with the aim of understanding the characteristics ofbeef offer and those the consumers demand; also, to check whetherthere are market failures. Seven municipalities were selected,which together represent 38.8% of the total regional populationand the largest regional cattle inventory (63.3%). A survey wasdesigned and 286 semi-structured interviews were carried outwith consumers, outside butcher’s shops and municipal markets.Measurements of central tendency and dispersion were calculated,and contingency tables were made. The frequency of consumptionwas one to three times per week. Most of the consumers (76.9%)ignore the origin, breed and type of cattle they are obtainingbeef from. Out of consumers, 42% are willing to pay 5% ofoverprice if there is certification that the meat has quality and isinnocuous. The amounts and frequencies of consumption aresimilar to those reported throughout Latin America.
