    La perspectiva de la Razón Abierta propone un método propio para el repensamiento de las ciencias. En concreto, sugiere analizar el contenido de cualquier ciencia desde las claves de la antropología fisiológica, la epistemología, la ética y la cuestión del sentido último. El artículo ofrece una primera definición del objeto formal y material de la ciencia gastronómica tal y como se entiende hoy en el ámbito universitario. A partir de aquí se analiza cómo, de las cuatro preguntas que propone la razón abierta, la cuestión antropológica obliga especialemten a repensar contenidos, dimensiones y alcance de la Gastronomía. En relación con las otras cuatro preguntas, el estudio se limita solo a apuntar un primer acercamiento que se ampliará en ulteriores investigaciones.

    The very nature of Expanded Reason requires a methodology of its own for the rethinking of the sciences. In particular, it suggests analysing the content of any science from the perspectives of philosophical anthropology, epistemology, ethics and the question of ultimate meaning. The article provides a first definition of the formal and material object of gastronomic science as it is understood today in the university sphere. From this footing, it is then discussed how, of the four questions proposed by expanded reason, the anthropological aspect in particular calls for a rethinking of the contents, dimensions and scope of gastronomy. In relation to the other three questions, the study is limited in its objectives, only striving to find a first approach that will be expanded in further research.
