El macellum y las tabernae jugaron un papel esencial en el desarrollo de la ciudad romana que va más allá de lo económico al trascender hasta lo social y político. En este artículo exponemos sus principales características, evolución arquitectónica y transformación a lo largo del tiempo haciendo hincapié en las fuentes escritas. También presentaremos un rápido viaje desde las ágoras mercantiles helenísticas, modelo de las romanas, hasta los mercados más lujosos construidos en el mundo oriental, y que, en el fondo, reflejará la idiosincrasia de aquellos que las diseñaron, construyeron, ocuparon y usaron

The macellum and the tabernae played an essential role in the development of the roman city that goes beyond economic to transcending by transcending social and political. In this article we expose its main characteristics, architectural evolution, and transformation over time with special emphasis on written sources. We will also present a quick journey from the hellenistic mercantile agoras, example on romans, to the most luxurious markets built in the eastern world, and which, deep down, will reflect the idiosyncrasies of those who designed, built, occupied and used them
