Influencia de la música en la percepción de vino Malbec

    El presente proyecto busca determinar la influencia de distintos estilos musicales en el proceso de evaluación organoléptica de un vino. En primer lugar, el vino bajo estudio se sometió a la evaluación sensorial mediante un Análisis Descriptivo Cualitativo, el cual definió las variables organolépticas más destacadas, tarea llevada a cabo por un panel de expertos sensoriales de tipo descriptivo. Luego, el mismo vino fue evaluado bajo distintos ambientes musicales, cuantificando aquellas variables sensoriales obtenidas en la etapa descriptiva, acompañando a este análisis la relación con las emociones disparadas por la música de acompañamiento. Los atributos organolépticos descriptos, en correlación con variables emocionales, fueron medidas bajo 4 (cuatro) tratamientos (jazz, rock, pop, y sin música de fondo), tarea llevada a cabo por un panel sensorial de tipo consumidores. Los parámetros sensoriales y emocionales se analizaron a través del análisis de la covarianza, método que permite evaluar la interacción existente entre variables cuanti y cualitativas, éstas últimas como variables explicativas. También permite eliminar la heterogeneidad causada en la variable dependiente por la influencia de una o más variables cuantitativas (covariables). Los resultados revelaron que la música elegida tuvo un impacto en la percepción sensorial de ciertos atributos del vino. Tal fue el caso de la música Rock cuyos resultados mostraron incrementos en la percepción de astringencia, aspecto del vino y notas especiadas. Mientras que la música Jazz, al igual que la música Pop, favoreció la percepción de notas chocolate, armonía y baja astringencia. Este trabajo aportará información sobre aspectos musicales (estilos) que, junto a otros aspectos ya estudiados en diferentes investigaciones (armonía, tempo y volumen), son necesarios tener en cuenta a la hora de emplear dicho arte en salas de degustaciones o eventos que reúnan ambos elementos (música y vino), como así posibles respuestas por parte de panelistas ante tal estímulo.

    The present project seeks to determine the influence of different musical styles on the organoleptic evaluation process of a wine. First, the wine was subjected to a sensory study Quantitative descriptive analysis, which defined the most prominent organoleptic variables, task carried out by a panel of descriptive sensory experts. Later, the same wine was evaluated under different musical environments, quantifying those sensory variables obtained in the descriptive stage, accompanying this analysis the relationship with the emotions triggered by accompanying music. These wine variables, in correlation with emotional variables, were measured under 4 (four) musical treatments (jazz, rock, pop, and without background music), a task carried out by a consumertype sensory panel. The sensory and emotional parameters were analyzed through the analysis of covariance, a method that allows to evaluate the interaction between quantitative and qualitative variables, the latter as explanatory variables. It also allows to eliminate the heterogeneity caused in the dependent variable by the influence of one or more quantitative variables (covariates). The results revealed that the chosen music had an impact on the sensory perception of certain attributes of wine. Such was the case of Rock music whose results showed increases in the perception of astringency, appearance of wine and spiced notes. While Jazz music, like Pop music, favored the perception of chocolate notes, harmony and low astringency. This work will provide information on musical aspects (styles) which, together with other aspects already studied in different investigations (harmony, tempo and volume), it is necessary to take into account when employing such art in tasting rooms or events that bring together both elements (music and wine), as well as possible responses from panelists to such stimulus.
