Resumen de O crescimento do vegetarianismo e suas repercussões na hotelaria

  Este artículo busca investigar el crecimiento del vegetarianismo como una tendencia dentro del sector hotelero, presentando algunas de las discusiones sobre los hábitos alimenticios de la población brasileña en la sociedad contemporánea y sus repercusiones en la industria hotelera. Para esto, se realizaron estudios de campo con empresas hoteleras que muestran preocupación por el tipo de comida que se ofrece a los huéspedes, seleccionando a quienes eligen ofrecer un menú vegano o vegetariano en sus restaurantes. La investigación exploratoria cualitativa incluyó, además de la encuesta bibliográfica, visitas a las empresas, entrevistas semiestructuradas con empresarios y cuestionarios en línea aplicados al público vegano. Hubo presencia de opciones vegetarianas como innovación en las empresas hoteleras en Brasil, que también pueden considerarse como una oportunidad de mercado y un elemento que promueve una mayor competitividad a las instalaciones de alojamiento que lo incorporan.

  This paper seeks to investigate the growth of vegetarianism as a trend within the hotel industry, presenting some of the discussions about the eating habits of the Brazilian population in contemporary society and its repercussions on the hotel industry. For this, field studies were conducted with hotel enterprises that show concern with the type of food offered to guests, selecting those who choose to offer a vegan or vegetarian menu in their restaurants. The qualitative exploratory research included, besides the bibliographic survey, the visits to the enterprises, a semi-structured interview with the entrepreneurs and online questionnaires applied to the vegan public. There was the presence of vegetarian options as innovation in hotel enterprises in Brazil, which can also be considered as a market opportunity and an element that promotes greater competitiveness to the lodging facilities that incorporate it.
