Food Safety and Sanitation in Hospitality Operations: students' Perspectives

    • For six semesters, attitudes about food safety held by students in a sanitation course at one university (N = 229) were assessed. Types of food safety training received were identified. Attitudes were positive with overall semester's mean ratings to ten attitude statements (alpha reliability of 0.79) ranging from 4.0 to 5.0 on a 5.0 scale (5=Strongly Agree). The majority of students reported work experience in foodservice but only about half indicated food safety training had been received. Training was provided most frequently in quick service and institutional foodservices. Over the study's three-year period, no increase in food safety training was noted.
