The milk is the product originating from of complete milking, uninterrupted, in hygiene conditions, healthy animals, well feeding and resting. By physical-chemical point of view, the milk is a homogeneous mixture of great number of substances (lactose, glycerides, proteins, salts, vitamins, enzymes), of which some are in emulsion (the fat and the associated substances), some in suspension (e.g. casein bind minerals) and another in true breakup (lactose, vitamins hydro soluble, proteins of the serum, salts). The Brazilian Normative Instruction N° 37 of October 31, 2000 establishes the minimum requirements of quality of the goat milk destined to the human consumption. The factors that affect the physic-chemical characteristics and the properties of the milk goats can be genetic, physiologic, climatic and mainly of alimentary origin. The goal of this study was to survey information regarding the physical-chemical quality of the milk goats, standing out the main factors that determine this parameter.
O leite é o produto oriundo de ordenha completa, ininterrupta, em condições de higiene, de animais sadios, bem alimentados e descansados. Do ponto de vista físico – químico, o leite é uma mistura homogênea de grande número de substâncias (lactose, glicerídeos, proteínas, sais, vitaminas, enzimas), das quais algumas estão em emulsão (a gordura e as substâncias associadas), algumas em suspensão (as caseínas ligadas a sais minerais) e outras em dissolução verdadeira (lactose, vitaminas hidrossolúveis, proteínas do soro, sais). A Instrução Normativa N° 37 de 31 de Outubro de 2000 estabelece os requisitos mínimos de qualidade do leite de cabra destinado ao consumo humano. Os fatores que afetam as características químicas, físicas e as propriedades do leite caprino podem ser genéticos, fisiológicos, climáticos e principalmente de origem alimentar. Este estudo objetivou levantar Informações a respeito da qualidade físico-química do leite caprino, ressaltando os principais fatores que determinam este parâmetro.
