      Con el propósito de determinar el comportamiento de variables atmosféricas que infl uyen en el proceso de secado tradicional del cacao en Chuao, Venezuela; y su correlación con humedad y acidez se instaló una estación meteorológica digital en las inmediaciones del patio de secado. Se registró data de las variables temperatura (°C), humedad (%) e irradiación solar (W.m-2). Las mediciones se realizaron a intervalos de 15 min. Simultáneamente se tomaron 96 muestras por triplicado de la masa de cacao de 20 g, cada 20 min durante los nueve días del proceso. Se identifi caron y empaquetaron en bolsas herméticas y selladas al vacío; luego, se conservaron en un congelador para garantizar la no modifi cación de sus características hasta el trasladado al laboratorio para análisis de humedad fi nal y acidez titulable. Se utilizó software Wheaterlink® para análisis de las variables atmosféricas y software Curve Expert Basic 1.40 para obtener líneas de tendencia, que se presentan como polinomios, con sus respectivos coefi cientes de correlación (CR) y desviación estándar (DS) de cada variable. La temperatura con DS=0,416217 y CR=0,989267; la irradiación solar con DS=30,287368 y CR=0,993219 y la humedad ambiental con DS=1,211358 y CR=0,991878. Los resultados para humedad inicial, critica y fi nal del cacao fueron 50,93%;

      30,37% y 6,96%, respectivamente; asociados a un tiempo crítico de 380 min y total de deshidratado de 1.900 min, con comportamiento higroscópico del cacao en horas nocturnas. El contenido de ácido acético estuvo entre 0,84 – 0,98%. La correlación variables atmosféricas y humedad del cacao obtuvo un CR=0,996363 y DS=1,131872.

      In order to determine the behavior of atmospheric variables that infl uence the traditional drying process of cocoa in Chuao, Venezuela; and its correlation with humidity and acidity was installed a digital weather station in the vicinity of the drying yard. Data was recorded on the variables temperature (° C), humidity (%) and solar irradiation (W.m-2). The measurements were made at 15 min intervals. Simultaneously 96 samples were taken in triplicate of the mass of cocoa of 20 g, every 20 min during the nine days of the process. They were identifi ed and packaged in airtight bags and vacuum sealed; then, they were kept in a freezer to guarantee the non-modifi cation of their characteristics until the transfer to the laboratory for fi nal moisture analysis and titratable acidity. Wheaterlink® software was used to analyze atmospheric variables and Curve Expert Basic 1.40 software to obtain trend lines, which are presented as polynomials, with their respective correlation coeffi cients (CR) and standard deviations (SD) for each variable. The temperature with DS = 0.416217 and CR = 0.9889267; solar irradiation with DS= 30.287368 and CR = 0.993219 and ambient humidity with DS = 1.211358 and CR= 0.991878. The results for initial, critical and fi nal cocoa moisture were 50.93%; 30.37% and 6.96%, respectively; associated with a critical time of 380 min and dehydrated total of 1900 min, with hygroscopic behavior of cocoa at night.

      The acetic acid content was between 0.84 - 0.98%.

      The correlation between atmospheric variables and humidity of the cocoa had a CR = 0.996363 and DS =1.131872.
