    We introduce a global and compared vision about the importance of the sugar cane plantation and sugar production in the insular territories, and in particular, within the Atlantic frame, highlighting the positive features (economic wealth, the positioning of the insular territories within the world 3nance market, the respect for the architectonic, artistic and cultural heritage, the development of Science and Technology) as well as the negative (soil exhaustion, deforestation, abuse of slave working forces) of these cultures. 5is approach will begin with the case of Madeira, thus establishing a comparison with other islands, such as Chipre, Sicily, Canary, Jamaica and Cuba. In order to better understand the questions here discussed, we have divide our presentation in three parts: 5e sugar plantations and the sugar, the sweet; the economic importance, the wealth and the trade markets; the sugar plantations and the sugar, the bitter: slavery, ecological issues and crisis and the insular tribute to the sugar production; experience, technique, terminology and culture.

    Apresenta-se uma visão global e comparada sobre a importância da cultura dos canaviais e da produção açucareira nos espaços insulares, com particular incidência para o mundo atlântico, destacando os aspetos positivos (riqueza económica, a3rmação dos espaços insulares no contexto da economia mundo, valorização do património artísticoarquitetónico e cultural, impulso da Ciência e Tecnologia) e negativos (esgotamento dos solos, des4orestação, exploração de mão-de-obra escrava) desta cultura e produto. Esta abordagem terá como ponto de partida o caso de particular da Madeira, mas com abordagem comparativa das demais ilhas, como Chipre, Sicília, Madeira, Canárias, Jamaica, Cuba. Para uma maior compreensão das questões em apreço, de3nimos três partes: Canaviais e Açúcar, o doce. A importância económica, a riqueza, os circuitos comerciais; Canaviais e açúcar, o amargo: escravatura, questões ecológicas e as crises; Tributo insular à cultura e produção açucareira; experiência e técnica, nomenclatura e cultura.
