Gastrocracia es un neologismo que se refiere al uso de los discursos y prácticas relacionados con el abastecimiento, la preparación y el consumo de alimentos para promover agendas gubernamentales. La fusión de los intereses gastronómicos y turísticos que distingue la fase actual de la gastrocracia española tuvo sus comienzos en 1964, cuando la Subsecretaría de Turismo obligó a los dueños de los establecimientos alimenticios a ofrecer un “menú turístico” -el predecesor del actual “menú del día”. Esta medida llevó a la subida en el consumo de carne y pescado y al desprestigio de los guisos tradicionales que no cabían en esta clasificación. Reflejando estos procesos, el cine de los años sesenta documenta un movimiento dialéctico desde el descrédito de la antigua gastronomía tradicional y de las formas de conmensalidad asociadas a ella, hacia la inserción de una nueva cocina inventada como tradicional en el marco del sistema alimenticio moderno.

I propose to use the term “gastrocracy” to describe the use of discourses and practices related to the supply, preparation and consumption of food to promote government agendas. The fusion of gastronomic and tourist interests that distinguishes the current phase of the Spanish gastrocracy had its beginnings in 1964, when the Undersecretary of Tourism forced the owners of the food establishments to offer a "tourist menu" -the predecessor of the current "menu del día". This measure led to the rise in the consumption of meat and fish and the loss of prestige of traditional stews that did not fit into this classification. Reflecting these processes, the cinema of the sixties documents a dialectical movement from the discrediting of the old traditional gastronomy and the forms of conmensality associated with it, towards the insertion of a new kitchen invented as traditional within the framework of the modern food system.
