• Proactividad: plantear soluciones nuevas a problemas antiguos y nuevos.
At present a change in the food and agriculture sector is being produced, connected with a substantial change in the perceptions of the consumer. The excess and animal origin products offering variety and the increase of the level of information and culture of the consumer has carried to this to demand, besides unavoidable qualities as the eating security, ethical-social values added such like the scrupulous respect to the protection and environmental conservation or the respect of the welfare of the animals during the productive process.
Consequently, the form to produce the food of animal origin should suffer a deep transformation to be harmonized with the dynamics of the demand of food for the first world. That transformation should be confronted as a challenge.
One of the fundamental concepts of the «new order» that arises of this school of thought is the approach of all these challenges under the criterion of «multiple problems… multiple solutions». For it is necessary the creation of multidisciplinary teams where biological criteria with projects engineering criteria live together and we can accede to coherent modelings with this new setting where the products production guarantee for human consume cannot renounce the unavoidable conservation of the different ecosystems. Without doubt, the bases to confront this challenge are:
• Description of the setting: Both, the animal origin protein production sector as well as the potential consumer of the first world.
• Grouping: of areas of diverse knowledge (Veterinary, Engineering, Nutrition and Dietetic, Technology of Food…) to be able to face the future and present requests.
• Proactivity: to present new solutions to new and old problems.
