Howgego details the challenges he encountered in brewing. His quest began in a lock-up under a railway arch in Brixton--home to the London fleer Lab, which runs classes in home-brewing. Beer-filled drums are stacked four high around the walls; hops and precision balances are scattered across the tables. There, head brewer Bruna Alajouanine introduced him to chemists Andy Chapman of Kingston University London and Louis Adriaenssens of the University of Lincoln. These one-time customers were now his brewing mates, and his collaborators in this challenge.
