This paper presents an artificial vision system for particle segmentation over an irregular background, to evaluate the effervescence characteristics of the sparkling wine. The proposed system is thought for static image analysis. The used technique is known as Mathematical Morphology, which is based on non linear processing. It is also used contour detection and shape recognition techniques. The system wants to provide a useful tool, being only necessary to introduce the original image, and the minimum and maximum bubble size, establishing, in this way, discriminatory parameters, getting automatically the segmented image
