    Paris is central to the economic and spatial organization of French territory. One proof of it can be found in the construction of a food system polarized by the attraction of the capital city. This article reviews the path of Paris’ food supply, intermediate level between all components of the system that nourrishes the city. A historical account from the end of the Ancien Régime to the post-World War II years, features a trajectory of this systemic construction, paying attention to spatial and gouvernance factors. The Parisian case attests a new way of reading historical geographies of food, institutions and politics that has been supplying the capital city.

    Paris est central dans l’organisation économique et spatiale du territoire français. Cela se traduit dans la construction séculaire d’un système alimentaire polarisé par l’attraction de la capitale. Cet article propose d’examiner la trajectoire de l’approvisionnement parisien, échelon intermédiaire et articulation entre toutes les composantes du système qui sustente la métropole capitale. Un récit de la fin de l’Ancien Régime aux années d’après-guerre permet de caractériser la construction du système alimentaire qui a dominé le XXe s., au prisme de facteurs spatiaux et relevant de la gouvernance du flux alimentaire. Le cas parisien permet ainsi de documenter les géographies alimentaire, institutionnelle et politique de l’approvisionnement d’une métropole capitale.
